| Nice, I was chatting to my sister in Cumbria on Messenger earlier and she was how nice the weather was there today. In contrast on this side of the Pennines here in York it’s been dull and foggy for the last couple of days.
I had the perfect riding day on Wednesday, blue skies, sun, not too cold and perfectly dry 'A' roads. From which I could see fields flooded from local rivers swollen by recent heavy rain. I swap over from open face to an adventure style helmet at this time of year. The adjustable peak means I can ride directly into low winter sun without being dazzled. Bought some double yolked eggs on the way home too. |

| Double yokes...mmmm. I used to share a house with a guy who worked on a chicken farm. He would bring home all the rejects....double, treble and quadruple yokes and eggs of all shapes and sizes. Best eggs I ever tasted... |

| A lott of the farms round here do free range eggs, in the spring the lay a lot of double yorkers. These can only be poached or fried, making an omelet, scrambled eggs or other such thing is both a travesty and crime against nature :-) |

| I buy double yolk eggs solely for making Spaghetti Carbonara. The traditional method is to use a single yolk egg per person and one extra egg yolk. Using double yolk eggs saves separating an egg yolk and gives extra creamy results. There's no cream used in Carbonara either, that seems to have crept into some recipes over the years. I also use Gianciale which is cured Italian pigs cheek and mainly fat, (using bacon of any type for Carbonara is just plain wrong and has a different flavour). When diced up and cooked slowly the rendered fat from guanciale has an amazing flavour. I like to use grated Pecorino cheese which is a bit salty for Mrs M, so I reduce the amount and substitute it with Parmesan or Grana Padano cheese. That's deviating away from the traditional Roman recipe too... But as the saying goes 'Happy wife, happy life'. |
